When Life Hands You Risotto, Make Risotto Cakes

I found myself with a few extra servings of risotto after Monday’s dinner, so I thought I’d try to make risotto cakes. They were tasty! Risotto two ways in two days. You might want to try it.
I took the leftover risotto and mixed it with some parm and basil. I have a feeling even if you leave these extra ingredients out the cakes will be tasty.
I used about 1/3 C of the risotto mixture to form cakes, then I let them sit in the fridge for about an hour. After they had chilled, I dusted the cakes with flour and fried those babies in butter.
The result – yum, I think. Similar to potato croquettes. Nice crispy fried rice outside, dense cheesy interior. I’m trying to think of a joke about dense, cheesy interiors…
I think the joke about the dense, cheesy interior is something about my sense of humor? My inner monologue?
I’m also remembering that when you started to take a photo of the risotto, I told you I needed lipstick first!
My household refers to these as leftover risotto pancakes. Very yummy, indeed.
They certainly are. The best kind of leftover – as good or better than the original!
