Here is JM, assembling torta rusticas with loving care. The crust for these savory pies was kind of bizarre, in a very good way. A cookie dough, really. It included eggs, it required kneading… weird for a pie crust. But so delicious with that savory filling of egg and cheese and prosciutto and more cheese. We’re emboldened to try this again, and experiment with fillings.
