There have been so many nice emails since my announcement yesterday. You understand the struggle to balance work and family – thank you for your supportive words! I’m looking forward to continuing conversations about cooking and feeding your family on the Panacea blog. But I know that reading about food isn’t at all the same as having it show up on your doorstep, already cooked. Quite a different enterprise, really. Some folks have asked for a recommendation for another dinner delivery service. I don’t have one to give yet, but I’ll keep my eyes open for good options. For our last two dinners, we’ll be cooking favorites from the Panacea recipe vault (a binder I keep in my closet).
Dinner for the week of October 17 will be Pork Chops au Robert, Braised Greens and Farro with Mascarpone. We’ll use naturally raised pork, as is our custom. The chops will be brined for 24 hrs, to ensure that they are tender and delicious. Then we’ll brown them and braise them in Sauce Robert – we’ve adapted a recipe from the Great Julia Child. Sauce Robert is tomato with white wine, thyme, and pan juices. How can you go wrong? Farro is a great accompaniment for this dish – it is a sweet and toothsome grain and here mascarpone cheese is folded in, adding a bit of richness. We’ll slowly braise local greens with a bit of onion and a splash of red wine vinegar. Dinner will be $17 per person, plus tax.

Sauce Robert deserves a fantastic bread. This week from the bakery: Filone, $5.00 for a delectable loaf. This is the same dough they use for baguettes. The loaves have a chewy interior with a lovely crust. On the sweet side: Lemon Bars, $2.75 a piece. These are wonderfully delicate desserts. They are tangy and sweet and irresistible.

To place an order for this week’s dinner or Provisions, please contact us by noon on Saturday, October 15. We’ll confirm your order by Sunday night.
On Monday we deliver to neighborhoods in central & south Seattle, and on Tuesday we deliver to the north end of Seattle. Monday deliveries are made by 5:30, Tuesday deliveries are made by 3:00 pm. Minimum order for delivery is $30, and there is an additional $5 charge. We also have five pick-up spots. Check our Web site to see if your zip code is served. You may pay with a check written to Panacea, or request a payment link for Pay Pal. Pick-up customers, please pay with Paypal or mail your check directly to Panacea.
